Homemade Biscuits & Gravy


One of our family's favorite things to have for dinner is breakfast food! My husband taught me his recipe for AMAZING sausage gravy and I brought the homemade biscuit recipe to the table :) I'll even show you the special way we plate ours, which makes it taste so much better!

I always start by making the biscuits because they can easily be heated up if I take too long making the rest of the food. This recipe makes approximately 18 biscuits. I made 15 tonight, but had a little bit of extra dough left that I am freezing to use another time.

Begin by putting 4 1/2 cups of flour in a food processor. Add 3 tablespoons baking powder, 1 1/2 teaspoons salt and 2 teaspoons sugar. Pulse the food processor to mix together the dry ingredients. Take 2/3 cups of cold butter and cut into small pieces. Add into the food processorand turn it on until the butter is in tiny pieces. Dump mixture into a large bowl.


Add 2 cups of milk and mix together until the dough holds together. Knead the dough on a lightly floured surface until it's an even consistency, then pat flat until it is about a half inch thick. Use a cookie cutter or a glass to cut circles out, then place onto a foil covered cookie sheet. Bake for 10-12 minutes at 450 degrees. Remove from the oven once the tops are a golden brown. Brush butter on the the baked biscuits immediately after taking them out.


While those are baking, it's time to start on the gravy. Put 1 tablespoon of butter in a large skillet. Add a package of mild Italian sausage, then chop it up and brown it. Do not drain the grease! When it is fully cooked, gradually add about a cup of flour until all of the sausage is well coated. I ended up adding about 1 1/3 cup of flour today, but it varies time to time. Next, take a can of Evaporated Milk and add about 5 1/2 cups of water to it, then pour it into the skillet with the flour coated sausage. Whisk the mixture and break up any clumps. Turn the burner to medium high until it starts bubbling, then turn it down to medium low. Add salt and pepper to taste. Keep whisking regularly.


Cook for about 15-20 minutes or until gravy gets thickened. If you plan on serving eggs with this, now is a great time to make them! We always serve our biscuits and gravy with scrambled eggs.


Now it's time for plating. Our special way is to break 1-2 biscuits up into pieces. Then spread the scrambled eggs over the biscuit pieces. Finally, smother the whole thing with the sausage gravy!

Homemade Biscuits

Ingredients

  • 4 1/2 cups flour

  • 2 cups cold milk
Directions
  1. Put flour, salt, sugar and baking powder in a food processor. Pulse to mix dry ingredients.
  2. Cut cold butter into small pieces and add to the flour mixture. Turn food processor on until butter is in tiny pieces.
  3. Pour flour mixture into a large bowl.
  4. Add milk to the bowl and mix until a soft dough is formed.
  5. Dump out onto a lightly floured surface and knead.
  6. Pat flat until it is about 1/2 inch thick.
  7. Use a cookie cutter or a glass to cut biscuits, then add to a foil covered cookie sheet.
  8. Bake for 10-12 minutes at 475 degrees until tops are golden brown.
  9. Brush with butter immediately after removing from the oven.

Sausage Gravy

Ingredients
  • 1 package mild Italian sausage
  • 1 tablespoon butter
  • approximately 1 cup flour
  • 1 can evaporated milk
  • approximately 5 1/2 cups water
  • Salt and pepper
Directions
  1. Melt butter in skillet.
  2. Brown sausage.
  3. Gradually add flour to the sausage until it is completely covered.
  4. Add milk and water while whisking.
  5. Salt and pepper to taste.
  6. Cook at medium high until it starts to bubble, then turn down to medium low.
  7. Continue whisking regularly.
  8. Cook for approximately 15-20 minutes or until gravy gets thick.
  9. Serve with biscuits

  3. My son loves biscuits and gravy. It is his favorite. He always orders it when we go out for breakfast. I think I've only tried to make it once. I'm saving this and will be making it this weekend. I can not wait to surprise him. :)
