St. Patrick's Day Pancakes


We love Brinner at our house! Not familiar with a meal called brinner? Well, it is the genius idea to scarf down breakfast food at dinner time, thus br-inner! 


We were having a really tough time figuring out what to have for dinner tonight, so we decided to have pancakes, bacon and eggs. Paul took care of the bacon and eggs, but I was motivated to Irish-up our brinner meal!

Making pancake shapes has become a fun cooking thing I like to do. I figure, either way they are going to taste good so I might as well play while I cook :) I made hearts for Valentine's Day, I figured 4 leaf clovers for St. Patrick's Day would be perfect. Once I got going, I also made a few 3 leaf clovers, pots of gold, horseshoes and several gold nuggets AKA silver dollar pancakes.


I'm sure there are some really great, easy homemade pancake mixes out there, but in the interest of time, I used instant pancake mix today. I dolloped four circles into my skillet, then took a little bit of extra batter to make a stem. I got creative with my other shapes too.


To make a pot of gold, I made one large circle, then poured a little line of batter along the top of the circle.The way that I made a horseshoe was by pouring the batter into a "u" shape. The gold nuggets were the easiest, since it was just making regular small pancakes.


So, using very little effort we were able to have a St. Patty's theme to our meal! This would be great to make on the morning of St. Patrick's Day. Especially served with some nice, cold, green milk!!!
