I have to be honest, I'm actually not the biggest fan of banana bread. I know, I know, I'm crazy!!! That being said, Paul and several of my other favorite people thoroughly enjoy it! So, when I notice that I have bananas that are past their prime, I love to whip up a loaf :)
We've been buying bananas more often because Olivia loves the taste, and they are easy for me to mash or blend into a puree for her. At her last doctor's appointment, we were given the go ahead to start exploring more food options like meats, eggs and yogurt. It is fun getting to watch her try all of the new tastes and textures, but some of her old favorites, like bananas, haven't been getting as much attention. That is how I found myself with 3 overripe bananas sitting on my counter this morning, so I decided to surprise Paul with some yummy bread when he got home from work.
My recipe is unique because it uses applesauce instead of butter. Using applesauce as a butter substitute is a great way to lower fat content in baked goods, while keeping the yummy taste.
I begin by creaming a cup of sugar and 1/2 cup of applesauce together.
Add 3 bananas, 1/2 cup of sour cream and 1 teaspoon of vanilla to the mixing bowl, then combine until you have an even consistency.
Pour the batter into a greased bread pan, then bake at 375 degrees for an hour.
Wait for 10 minutes after removing from the oven, then cool on a wire rack.
Slice the bread once it is completely cool, then ENJOY!!!

Best Banana Bread Ever
Ingredients
- 1 cup sugar
- 1/2 cup applesauce
- 2 eggs
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 3 VERY ripe bananas
- 1/2 cup sour cream
Directions
- Preheat oven to 375 degrees.
- Cream together applesauce and sugar.
- Mix in eggs.
- In a separate bowl, whisk together flour, baking soda, salt and cinnamon.
- Mix in bananas, vanilla and sour cream.
- Pour batter into a greased bread pan.
- Bake for 60 minutes.
- Cool in pan for 10 minutes.
- Cool completely on wire rack.
- Slice and ENJOY!
I like banana bread fine, but it takes quite a bit of work to make bread, and I'm lazy. This looks yummy though. I tend to use my ripe bananas for smoothies.
